FATOUSH SALAD
Salata Fatoush
Fatoush is an appetizer salad dish made from several vegetables and toasted or fried pieces of pita bread. Fatoush salad allows cooks to use seasonal produce by mixing different vegetables and herbs according to taste, and also to make use of pitas that have gone stale. The vegetables are cut into large pieces compared to Tabbouleh which requires ingredients to be finely chopped. ...Sumac is usually used to give Fatoush its sour taste. Fatoush is a famous dish served at Lebanese, Syrian, Palestinian, and Jordanian.
Lettuce (Washed, Dried and torn into small pieces
Tomatoes (Cut into small pieces)
Cucumbers ( peeled and cut into small pieces)
1/2 cup of onion or green onion (coarsely chopped)
Fresh mint leaves (torn into pieces)
Fresh parsely (chopped)
Frying toasted Arabic bread
Dressing:-
1 clove of garlic (crushed with salt)
Salt to taste
Lemmon juice
Olive oil (to taste)
Add all vegetables in a salad bowl.
Mixed all the dressing and pour over salad/ vegetable.
Sprinkle with bread on the top and serve
TABOULEH
Tabouleh
Tabouleh, tabbouleh or tabouli is an Arabic dish famous in Lebanon, Syrian, Palestine and Jordan. It is often used as part of appetizer. Tabouleh primary ingredients are burgul), finely chopped parsley, mint, tomato, scallion and other herbs with lemon juice, olive oil and various seasonings.
3/4 cup of fine grained cracked wheat (Burgul...)
3 cups of water
3 cups of fresh minced parsley
2-3 large chopped tomatoes
4-5 minced green onions
10 fresh mint leaves (Minced) or 2 tablespoons of dried mint
Dressing:-
1/2 cup lemon juice
1/2 cup olive oil
Salt to taste
Rinse the cracked wheat several times and set aside to soak in the water for 20 minutes or longer.
Chop the parsley very, very fine (hahhah PLZ Do not use a blender lol..).
Add remaining ingredients and squeeze the wheat by handfuls, removing all the water, and add to the salad. Pour on the dressing and mix well.
Serve accompanied by crisp leaves of lettuce to be used to scoop up the salad.

NASI BERYANI AYAM HADRAMAUT
Assalamualikum.. Selamat bertemu kembali, MAAF la yer resepi lama baru nak kelua N3. Sebenarnya nasi ni dah lama Lydia masak untuk potluck umah kak Mala bulan lepas. Nak update N3 net asyik on off dan hang je, bosan sangat kadang- kala nak update blog ni rasa bercinta sangat- sangat. Kalau nak ikutkan resepi banyak Q' sampai dah basi tak kelua- kelua juga, ditambah pula sekarang ni Lydia agak busy sebab selalu g tempat keje hb so masa nak ngadap net memang terbatas. Network kat my area ni amat kurang siuman..hehehhe, apa nye idak kalu waktu biasa tak dapat nak on9 kena tunggu after 3am-4am..mati la nak jadi jaga tiap hari.:)).. Rasanya tak berbaloi bayar net tiap bulan buat bazir sebab network tak bagus. Dah sebab tu kalau post N3 kat blog pon arasnya amlas nak menceceh sebabnya:-
1) No idea
2) Tak pandai nak merepak
3) Malas..(ni yg utamanya..)
Weather hari ni pun agak baik waalupun bahang musim panas sudah menunjukkan taringnya. Alhamdulillah la pulah seminggu dua ni Kuwait masih dalam kawalan tak de dust storm lagi macam yang lepas sampai tak tahan nak bernafas, rasa macam bernafas dalam debu.. Berbalik pasal nasi beryani ayam Hadramaut.., nasi ni memang selalu Lydia makan kat restoran Yeman dan dah beberapa kali masak kat umah pon. Nasi ni memang wangi je aromanya dengan bau rempah ratus... kalau tengok nama memang MAUT seram kalau makan pon MAUT tak mo stop2.. hehehe..lagi maut kalau dapat makan ramai- ramai memang la tak ingat dunia asyik menambah jer..
Jom tengok resepinya dan cuba buat bulan posa nanti atau open house raya nanti kasi gempak orang kampung atau kengkawan. Bagi Lydia dah arab cuisine ni dah tak de rasa special pon nasi ni macam nasi basahan (apa ingat pakaian je ker leh jadi basahan..hehehe) bukan apa sebab makanan harian Lydia di Kuwait ni, tambahan pula bersuamikan orang lua memang jaranglah masak makanan melayu ni. Sesekali nampak makanan ASEAN foods tu rasa so special sangat, sebab jarang dapat menikmati (dah terbalikan?).
NASI BERYANI AYAM HADRAMAUT
Bahan untuk merebus ayam
2 ekor ayam - potong 5(tapi hari ni lydia potong 10)
1/4 cmt nutmeg powder
1/2 cmt cardamom powder
1 cmt arabic mix spices
2 helai daun bay
1/2 camt kayu manis powder
3-4 kuntum bunga cengkih
1 camt corainder powder
1/2 cmt serbuk lada hitam 1 camt cummin powder
1 camt ginger powder
1 biji tomato yang ranum- dibelah 4
1 labu bawang besar - didadu kecil 1 biji lada hijau - belah 2
garam secukup rasa
air secukupnya
Masukkan ayam dalam periuk bersama kesemua bahan di atas kecuali garam.
Rebuslah hingga ayam empuk lebih kurang 45 minit.
Masukkan garam pada 15 minit terakhir.
Asingkan ayam dari kuah/stock, tapis kuahnya.
Susun ayam dalam tray dan ketepikan seketika
Bahan untuk memasak nasi
3-4 biji cardamom pods*
2 helai daun bay*
1 batang kulit kayu manis*
3-4 kuntum bunga cengkih*
1/2 camt corainder powder*
1/2 camt serbuk lada hitam*
1 camt cumin powder*
1/2 camt ginger powder*
1 labu bawang besar - didadu kecil
2 biji lada hijau - belah 2*
garam secukup rasa
1/4 cawan minyak masak
8 cawan beras basmati
12 cawan air/air rebusan- (1cwn beras=11/2-2 cawan air bergantung jenis beras)
Tumiskan bahan bawang hingga transparent.
Masukka bahan bertanda* dan terus menumis hingga terbi baunya.
Masukkan beras dan goreng sebati dengan rempah ratusnya/ transparent dalam 2-3 minit.
Kemudian masukkan air rebusan ayam tadi.
Masukkan garam secukupnya bersama sedikit saja pewarna kuning.
Kacau sedikit dan biarkan hingga mendidih dengan api yang paling besar dan tutupkan dengan penutup periuk.
Bila air hampir kering masukkan sedikit lagi pewarna merah+kuning bersama sedikit air panas dalam 1/4 cawan air(dicampur bersama baru tuang atas nasi)tadi di tengah- tengah periuk dan perlahankan api.
Tanak seperti biasa hingga nasik benar benar masak.
Bila nasi dah masak tutupkan api dan biarkan selama 5 minit dan gemburkan sedikit dengan garfu.
Taburkan sedikit daun corainder atau gajus yang digoreng tanpa minyak di atas nasi..
Taraaaaa… Nasi siap untuk dihidangkan…
NOTE:-sementara menunggu nasik masak bakar ayam...
Cara-cara bakar ayam
1/8 camt nutmeg powder
1/4 cmt cardamom powder
1/2 camt kayu manis powder
1/2 camt corainder powder
1/4 camt serbuk lada hitam
1 camt cummin powder
1/3 camt arabic mixed spices
garam secukup rasa
Susun ayam di atas tray/ dulang pembakar.
Percikkan atas ayam sedikit air.
Panaskan oven/grill api atas.
Sementara menunggu grill/oven panas lumurkan ayam dengan sikit garam rempah ratus. Lepas tu lumurkan pula pewarna (merah+kuning) Masukkan dalam oven, grill sekejap sebab ayam dah masak.
Baalikkan ayam sikit...guna api atas dlm 10-15 minit untuk bagi kuning.
Ayam yang dah masak bolehlah diangkat dan dihidangkan bersama nasi, salata (salad), maraq(kuah tomato)@sup dan salsa
Salsa
2-3 biji buah tomato masak
cili hijau(ikut kepedasan masing2)
3 ulas bawang putih
1 labu bawang besar
lemon jus lemon (semasam yang anda suka)
garam secupup rasa sedikit air untuk blend bahan
Blend kesemua bahan dan simpan dalam peti sejuk selaam 30 minit sebelum dihidangkan Selamat menjamu selera..

Timun - dihiris panjang 1-11/2 inchi setelah dibuang tengahnya
Lobak merah - dikupas dan dihiris panjang 1-11/2 inchi
Bawang besar- dipotong bulat
Cili hijau-dipotong serong
Cili merah-dipotong serong
Sedikit air suam
Cuka secukup rasa
Gula secukup rasa
Garam secukup rasa
Potong timun, lobak merah, lada, bawang.
Dalam mangkuk kecil, satukan garam, gula, cuka serta air suam dan kacau hingga gula larut.
Tuangkan ke dalam mangkuk besar yang berisi syuran dan gaul sebati. Simpan dalam peti sejuk sebentar dan sedia untuk di nikmati..:)

Syrian Style Tabouleh
Syrian Style Tabouleh
My in laws are Syrian and she make the best tabouleh...
this is their recipe
2 cups fresh parsley
1/4 bulgur Wheat-soak with hot water for 10-15 minutes & strain
1 Medium onion spring
2 Medium red whole tomatoes
3 tbsp Fresh Mints
2 tbsp Olive Oil
1 tsp garlic paste
1/2 tsp grenadine molases
1/2 Lemons juice
Salt to taste
Clean parsley from any yellow leaves and line up the "heads" of the parsley and rinse parsley well.
Chop stems from parsley and finely chop parsley and place in a large mixing bowl.
Finely chop the onion spring, mint and tomatoes place in bowl.
Release the juice form 1/2 lemon.
Add the bulghur wheat in the mixing bowl (YOU DO NOT HAVE TO COOK IT!).
Add salt, garlic paste, grenadine molases and olive oil to taste.
Mix everything together and ENJOY!

Iceberg salad- cut to medium size as you like
Tomatoes- cut to medium cube
Cucumbers- cut to medium cube
Fresh Parsley- chopped
Fresh Corianders leave- chopped
Fresh Mint- chopped
Salt to taste
Juice from 1/2 lemon
1 tbsp Apple vinegar
2-3 tbsp Extra virgin olive oil
Fry tortilla bread for garnished on the top*
How to prepare:
Mix all in the bowl except *. Put in and individual bowl/ plate and sprinkle with frying tortilla bread and serve with your favorite meal
