Steam Moist Banana Double Layer Cake
Winter ni tekak asyik nak menelan je la dan perut pon samalah berkeroncong nak mengisi macam- macam. Kek pisang lembab pulak nampak macam sedap jer memanggil- manggil dan kebetulan pulak memang ada 3 biji pisang kat umah ni. Kebetulan semalam ada lak kawan request nak datang lepak- lepak kat umah petang nanti minum- minum the O' sambil borak kosong.
Tengahari tadi sambil tunggu air soya sejuk sebab nak buat tofu telur (macam tpfu jepon tu la), Lydia pon try la buat kek ni.
Mula tengok kek ni kat dapo Mas, tengok hasil kerastangan Mas macam lembut jer kek ni. Tapi bila google jumpa lagi kat Honeybeesweet. Cuba tengok tekstur kek ini, memang lembut, moist dan gebus, look like apamkan?. Lydia tukar esen vanilla kepada esen pisang dan tepung pao tak der, mana nak cari kat Kuwait ni. Ingat ada Superfine cake flour kat pantry tu boleh la..bila dah start membancuh rupa- rupanya tepung Superfine dah abis.. so gasaklah pakai tepung gandum pon ok jer. Cubalah senang, sedap dan yang pasti anda tak menyesal apabila memakanya. Tapi Lydia memang kalu buat kue ke haper ke suka adjust gula sebab tak suka manis.. Jom skodeng resepinya.,
Bahan A:
200g mashed banana (2 biji pisang montel)
1/8 tsp banana extract
1 tsp baking soda
pinch of salt
Bahan B:
3 eggs
100g brown sugar -*kurangkan kepada 80g sebab tak suka manis
100g superfine cake flour/tepung pao-* guna tepung gandum jer
1 tsp baking powder
65g vegetable cooking oil
Basic Sponge Cake Top Layer:
2 eggs
60g sugar
25g milk
65g pao flour-*guna tepung gandum jer
In a mixing bowl, stir together all the ingredients in A and make sure everything is well combined.
In another mixing bowl, beat together the eggs and sugars together till thick and light in colour.
To check if ready, see the evident ribbons formed when it drips down on to the surface of the batter. Add in flour and baking powder and stir well.
Lastly, add in the mashed bananas mixture and vegetable cooking oil and stir in gently.
Pour the batter into the prepared greased tins.
Steam for the cakes for 15 to 20 minutes till cooked and tester comes out clean.
Remove from steamer and set aside.
Prepare the top sponge layer.
Whisk the eggs and sugar till thick and doubled in volume and forms thick ribbons.
Add in milk and flour and stir in gently.
Pour the cake batter over steamed banana cake layer and steam again for another 15 minutes till done at medium high fire till done.
