MEETBALL STEW (dawood basha)
1kg Minced beef/lamb
1 large Onion-peeled and finely chopped
Salt and black pepper powder to taste
1/3C Fresh parsley- finely chopped
1/3C Fresh coriander- finely chopped
2 tbsp Virgin olive oil
1 large Onion-sliced
5C tomatoes- peeled and chopped
2 cubes MAGGI stock-dissolved in 1 litter hot water
1/2 tbsp Tomato paste
2 tbsp Roasted pine nuts
How to prepare:
Mix the minced lamb/beef with chopped onions, salt, pepper and parsley, mix well until combined and make into a small ball.
Heat oil in a casserole and fry meet balls until golden brown, remove it and keep aside.
Add in sliced onions and fry until golden, then add the tomatoes, dissolved MAGGI stock and tomato paste, cook until boiling and add in meet balls and simmer for 30 minutes or until sauce is thin thicken.
Sprinkle with the pine nuts over the meet balls before serving with Vermicelli Rice (Roz Shariya). Serve hot and enjoy!
