MY HOMEMADE CHICKEN SHAWERMA (Middle Eastern spiced meat sandwich)

Shawarma or Middle Eastern taco is popular throughout the eastern Mediterranean. It originated in northwestern Turkey as döner kebab. But it reached its current form and popularity with the Turkish population in Germany. But in Malaysia, they call that kebab….






500g Lean lamb/beef, or boneless, skinless chicken, sliced very thinly
1-2 cloves Garlic, minced
1/4 tsp black pepper
1/2 arabic mixed spices
1/4 tsp cardamom powder
1/4 tsp nutmeg powder
2 tbsp yogurt
Salt to taste
1/4 tsp cinnamin powder
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp Vinegar*(for soak chicken/meet)
1 tbsp tomato paste**-optional if you like your chicken/meet become pinky(I don't put)
1/2 tsp tumeric powder**- optional if you like your chicken/meet become yellowish(I don’t put)

Wash chicken, soak with vineger for 15-20minutes and drain. Mix all the ingredients and set aside for at least 3 hour or overnight. Drain and discard any excess marinade.

For non-stick pan:- Heat pan, spread the chicken/meet and fry until golden around 5 minutes. If you like, when chicken/meet half cooked you can add little big onion (slice thinly/julient) and continue fry until golden. Or other option you also can add some chopped fresh tomatoes and parsely, mix when hot and serve inside folded pita bread or hot dog bun with your choice of garnishing/ sauce.

For Broil:- Heat an oven broiler to high. Spread the meat evenly in a single layer on an ovenproof pan. Set 4-6 inches under the broiler flame and broil until cooked through, 5-8 minutes. Stir halfway through to cook evenly.

For Grill:- Heat coals or set gas to high heat. Spread the meat in a grill basket and grill until cooked through, 5-8 minutes, turning occasionally. Serve inside folded pita bread with your choice of garnising(see variations).

Condiments and Garning: Shawarma is commonly served with tahini (taratour) sauce, yogurt sauce or garlic mayonnaise. Other garnishes include chopped tomatoes, sliced cucumbers, shredded lettuce, sliced red onion, pickles, hummus and French fries.

Notes- Shawarma meat is typically shaved off a large rotating cone of layered meat. The meat is roasted with radiant gas or electric heat. Pieces of meat are sliced off and served in a folded pita or hot dog bun with garnishes and condiments. The word shawarma is an approximation. "turning." Sometimes spelled shwarma. Known as guss in Iraq.
