CARAMELIZE CHICKEN WITH POTATOES-(Lidia Italy)
1 Chicken-cut to 8
250g Baby potatoes-wash and cut to half
2 big White onions- quartered
100g Smoked sosej/panceta
2-3 tbsp Canola oil
Salt & Black pepper to taste
Fresh rosemary
Fresh parsley- for garnishing
How to prepare:
Wash chicken, rinse and dry well. Seasoning chicken with salt and black pepper, keep aside.
Put oil into casserole on medium heat and fry the chicken's booth side until golden, remove and keep aside.
In the same casserole add pancetta/ smoked sossej and fry until light golden color and add potatoes on bottom of casserole and then put chicken, onion and rosemary.
Cover the casserole with lid and cook in a low heat around 20-25 minutes until chicken are caramelize/ golden brown and potatoes are tender.
Serve with green salad, mushroom/ chicken cream soup and garlic bread.
