RICE WITH FAVA BEANS

RICE WITH FAVA BEANS
4C Basmati rice
11/2 tsp Saffron
8C Water
4 tbsp Oil
1 kg chicken- cut into 8 pieces
2 large Onions- slices
3 cloves garlic- chopped
11/2 tsp Salt
1/2 tsp Black paper powder
1 tsp Cumin powder
500g frozen Fava beans-shelled
4C Dill- chopped
1 tsp Turmeric
1/2C Butter or oil
How to prepare:
Wash rice well and soak in warm salted water for half hour. In a medium casserole, heat oil, add chicken and fry boot side until golden, remove and keep aside.
Add onions and fry until light golden. Returned chicken into casserole, add garlic, salt, cumin and black pepper. Cook chicken on low heat for 20-25 minutes until tender, keep it in the casserole.
Bring 8 cups water and 2 tbsp salt to boil in a large pot. Add rice, fava beans and turmeric to the pot while water is boiling. Boil briskly for 10 minutes, stirring gently. Remove from heat and drain in a large colander, rinse in lukewarm water.
Spread the rice mixture over the chicken, mound the rice in the shape of pyramid. Make a few holes in the rice. In the small casserole heat the butter, saffron mixture and 1/2 cup of water and pour over the rice pyramid.
Cover tightly and simmer 30 minutes over low heat until rice is dry and fluffy. Bring into the platter; gently mould the rice in the shape of pyramid. Arrange the chicken around the rice. Enjoy!
Note: You may use meat instead chicken
