RICE WITH GREEN BEANS and CHICKEN
1kg chicken- cut to 4, wash & drain
4C Basmati rice
8C Water
2pcs Bay leave
1 Cinnamon stalk
1large Onions- quartered
2 cloves garlic- cut into 2
1/2 tsp Cloves
1 tsp all spices
11/2 tsp Salt
1/2 tsp Black paper
250g frozen Green beans
1/2C Butter or oil
How to prepare:
Wash rice well and soak in warm salted water for half hour.
In a medium casserole, add chicken, black pepper, cinnamon stalk, bay leave, onion, garlic, cloves and salt, bring to a boil until chicken is tender. Remove the chicken from stock and keep aside. Keep the chicken stock.
Bring 8 cups water (+- with chicken stock) to boil in a large pot. With high heat add rice and green beans, when the water is boiling add oil, leave on high heat until water boils then cover tightly and reduce the heat. Simmer for 20-25 minutes until rice is cooked and dry.
Rub chicken with some olive oil and put into oven dish and bake until golden. Bring rice into the platter; arrange the chicken around the rice. Enjoy with dakous/ tomato salsa or your favorite salsa.
Note: You may use meat instead chicken
