KABSAH RICE WITH CHICKEN-(whole roast chicken)

Kabsa is an Arabic favorite rice dish popular in many Gulf countries such as Kuwait, Saudi Arabia, Bahrain, Qatar, and United Arab Emirates. Because Kabsa is really delicious. These dishes are mainly made from a mixture of spices, rice (usually long-grain basmati). There are many kinds of kabsa and each kind has a uniqueness about it. The main ingredient that accompanies the spices is meat, chicken, goat, lamb, camel, or sometimes beef, fish or shrimp. The dish can be served hot with daqus(Arabic-دقوس‎) — home-made tomato sauce.
KABSAH RICE WITH CHICKEN-(whole roast chicken)
Ingredients:-
4Cups basmati rice ( 1cup per peson..tumpo kome nak menghabiskan nye)
1kg Chicken- whole
2 large onion-quartered
300g fresh Tomatoes*-blended together without water
4 pieces Cloves
2 large green pepper*-orang Msia panggil cili bengala jangan Bangla udah le
1/2tsp Cardamom powder
1/2 tsp Cinnamon
2-3 pieces Bay leave
1tbsp Mixed spices
1tbsp Salt
2 pieces dried lemon (lomy in Arabic)
1/3Cup cooking Oil/ Ghee
Filling:-
3/4Cup Chickpeas
2 Medium onion-chopped
3-4tbsp oil
1/2tsp black pepper powder
1/2Cup Raisins
3/4tsp Dried lemon powder (lomy)
1tbsp Kabsa spices
salt to taste

How to prepare:-
Wash rice well; soak in salted water for 30 minutes and strain.
Wash chicken well. Prepare the filling, fill with filling. Close the openings tightly. Put the stuff chicken in a casserole. Cover the chicken with water, leave on high heat until water boils, remove the rime and discard.
Add quartered onion, cardamom, cinnamon, bay leave, all spices, lomy and bay leave, bring to a boil on a high heat and cook for 30-35 minutes until chicken is tender. Remove chicken from the stock and roast chicken in oven until golden brown.
Strain the stock; add more water to get 8 cups of stock. Put in a medium casserole, add 1tsp salt and kabsa spices. Boil for 2-3 minutes, reduce heat, cover tightly and leave 25-30 minutes until rice is cooked. You may put the chicken and the remaining filling on the top of rice in the last 10 minutes. Place Kabsa Rice in the platter, arrange chicken and remaining filling on top, serve it with dakkos or salsa tomato.
Filling:-
Put chickpeas in a small casserole, cover with water, and boil 10-15 minutes until cooked. In a large frying pan heat onion until wilted. Add 2-3 tbsp water and cook until dry and golden brown, add oil and raisins, cook until dry. Add cooked chickpeas, spices, lomy/ dried lime, black pepper powder and salt, mix well. Use for stuffing the chicken.
